Vanilla Ice Cream

Step by step

  1. Split the vanilla bean. Pour the milk, the cream and the vanilla into a saucepan, and let it boil.
  2. Blanch the yolks with the sugar, pour the milk over this mixture and mix.
  3. Pour back into the saucepan and cook until the mixture coats the spoon.
  4. Pour into a dish and set aside in the refrigerator for 24 hours.
  5. The next day, remove the vanilla bean, place it in an ice cream maker and leave to set in the freezer.
